Lasagne is a classic comfort food. The crunchiness of the golden cheese melted on top of the rich tomato and beef sauce is a combination that just cannot be matched.
Your gluten free diet shouldn't stop you from enjoying lasagne. Although I am the only person in my household is gluten intolerant, everyone in my house enjoys this recipe and can't tell that I have used gluten free products.
I used the Asda gluten free lasagne sheets but you can use whatever type of sheets you have available.
The key to a good lasagne is the beef and tomato sauce. The more longer you cook it for the more richer and flavourful your lasagne will be. I have added some vegetables to my sauce as well. Although this is optional I would highly recommend adding them to ensure you are taking nutrients from you lasagne as well.
Recipe:
1 large onion
1 carrot
1 celery stick
50g of mushrooms
3 garlic cloves
500g of lean beef mince (5% fat steak mince)
1 tbp dried basil
1 tbsp oregano
1 beef stock
2 tbps tomato paste
400g peeled plum tomato
black pepper
salt
red chili powder
for white sauce:
50 grams butter
50 grams gluten free plain flour
black pepper and salt
orergano
200 grams gluten free lasange sheets
150 grams grated mozzarella cheese
Method: Add some olive oil into a non-stick frying pan and peel your garlic cloves. Either use a garlic mincer and add the garlic to the pan. Let it become light brown. Then finely dice your onion and add that into the pan. Let it become light brown. Then add your mince meat and let it cook thoroughly.
Then finely chop your celery and grate your carrot and add that to the pan.
Once the vegetables have cooked add your dried herbs and add your tomato paste and add your dissolved beef stock.
Add your can of plum tomatoes and add some water. Leave the lid on and let the sauce simmer as it allows the flavours to develop.
Season the sauce with salt, black pepper and red chilli powder and stir through it occasionally
with gluten free lasagne sheets it is best to boil them first. Add a bit of salt and oil to prevent the sheets from sticking together.
preheat your oven at 180C Fan
to make the white sauce add the butter to the pan. Add the spoon of flour and whisk until its a paste like consistency and allow to sizzle for one minute.
add the milk slowly and keep on stirring until it becomes a thick white sauce. If it's not thick enough keep on stirring and heating it.
To assemble take a oven dish and start with a single sheet of lasagne and then a spoon of the tomato and beef sauce. And then add another lasagne sheet and then add a spoon of the sauce and then another sheet and repeat until the sauce gets finished.
finish the lasagne with the grated cheese and put into the oven to bake for 30 minutes. When the sauce starts boiling around the edges of the pan you'll know its cooked through and you can serve.
